Cashew Cream Cheese Frosting!!
2 cups of cashews
2/3 cup of dates
2 tablespooons of coconut oil
2-6 tablespoons water
1 teaspoon of vanilla
1/4 teaspoon of salt
4-5 tablespoons of honey (or until it’s sweet enough for you. add a little Stevia if you don’t want to add more honey and don’t mind the taste of it)
Cinnamon to taste
Soak the cashews and dates in filtered water for at least 30 minutes. Then drain and put them in a food processor with the coconut oil, vanilla and salt and blend until it’s creamy. Slowly add between 2-6 tablespoons of water until it’s at your desired consistency. Then add honey, stevia and cinnamon to taste.
I left this in the fridge overnight and then frosted my Carrot Cake/Muffins with it in the morning. I brought these for a group of friends, some who are into “healthified” sweets and some who aren’t. I cannot with words quantify the joy that swells up inside when you anxiously observe your friends, who are somewhat indifferent to the health concerns if taste isn’t up to par, enjoy the fruits of your labor. Nothing makes me want to bake more than this!!!
